chicken and rice – revisited

Posted by ernie on April 19, 2008

revisted?  well it’s the second time i’ve made it.  the first time was tradition chicken and rice.  “arroz con pollo” if you will.  i will.  in fact i did.  but it did not.  the end result was considerably less than spectacular.  across the board it was bland.  the rice was bland.  but it looked delicious.  here, take a look.

look but don\'t taste.

so that’s all there is to say about “my first time.”

moving on.

burgers and fries

Posted by ernie on March 31, 2008

for dinner tonight is burgers and fries.

it should have been beer can chicken, but i forgot to take the broiler chickens out of the freezer. let’s not talk about that. for dinner tonight is burgers and fries, and you’ll just have to deal with that.

pascetti squash

Posted by ernie on March 17, 2008

we happened upon a big ol’ squash and needed to do something with it.  so this is what we did:

this was the perfect dish…and recipe.  it’s super easy, quick, and absolutely friggin’ delicious.  the squash comes out nicely pasta-esque with just enough of a crunch to keep you interested.  the flavors of all the vegetables mix together perfectly and although the dish would have been great without it, the crumbled feta is just the punch it needs to send it over the top.

egg-tasm #2

Posted by ernie on March 6, 2008

on tonight’s menu: more eggs.

3508d.jpg

eggs! form of, quiche!

inspired by food television, i decided to tackle my first quiche. i’ve had delicious quiche before, but never made it myself. in general, my “first time” endeavors into fooding are riddled with regret, remorse, and night terrors. in short: hunger wins.

tonight would be different. tonight i would tackle my foe with unfettered valor. i would not hold back and i would not back down. tonight i would hack and slash and bake until the agents of my pantry were sufficiently subdued.

tonight would be a long hard battle against the forces of egg and hunger.

breakfast time again; this time for real, as i actually was out of bed before noon.  that means it was time for some actually breakfast-y foods.

fresh basil pizza and tomato bisque

Posted by ernie on March 3, 2008

today i had off, which means i had plenty of time to consider what to eat. and then plenty of time to prepare whatever i would decide to eat. to top it off, sarah was home sick so we could consider these things together.

in the end, we decided upon pizza and tomato soup. the pizza would be somewhat homemade – a store bought pizza dough – and the tomato soup would be entirely homemade.

and here’s a picture to keep you interested.

this is pizza.

potater fries

Posted by ernie on March 1, 2008

well it’s been a couple of days so i guess it’s time to update. a lot has happened between myself and food, though most of it was not interesting. tuesday i was working all day, so it was tomato soup to hold me over. then it was a wawa sandwich on the way home. wednesday was kind of interesting. i used one of the remaining tuna steaks to make a sammwich…almost like a tuna steak burger.

here, look:

monday morning leftovers

Posted by ernie on February 25, 2008

22508a.jpg

today i slept till noon. so breakfast was worthless, especially since i’ve had eggs for the best few days and am in no mood for more. so what’s a hungry guy to do?

break out the leftovers, that’s what. mostly because there were no good breakfast foods around and i wasn’t really up for a breakfast brainstorming session. waking up this late actually makes it easier because it’s easy to validate skipping breakfast and starting with lunch.

and my personal favorite vehicle for leftovers? fajita of course.

it’s all in a days work.

22208d.jpg

this is how the night ended. fried chicken and mashed potatoes. but we won’t be starting there. you’ll have to make it through the rest of the day before you get to fried chicken and mashed potatoes.

eggs for breakfast

Posted by ernie on February 21, 2008

22108a.jpg

i started the day by sleeping till noon. that’s a good start. when you’re in bed that long the only things that really get you up are hunger, the progressively increasing necessity to scratch various parts of your body, and the overwhelming stink of your own mouth. the problem then becomes how to remedy all of these things and in what order.
